How to Make the Perfect Toasted Pumpkin Seeds

Halloween or not, toasted pumpkin seeds are a delicious snack any time of the year.  However, making them yourself makes it an extra special treat to enjoy in the days after carving your Halloween pumpkin.

I’ve always been a huge fan of simple salted pumpkin seeds, but this year, I wanted to try something different then the typical way of seasoning them before roasting. I did lots of research and tested a few different recipes, and here are the top two that got rave reviews for all of my very willing sampling participants.

Sweet & Spicy

1 & 1/2 cup  pumpkin seeds
1 tsp light olive oil
1/4 cup sugar
1/2 teaspoon cayenne pepper
1/2 teaspoon sea salt

Sweet & Salty

1 & 1/2 cup  pumpkin seeds
1 tbsp melted butter
1/8 cup sugar
1  tsp sea salt

Directions:

After removing the seeds from the pumpkin, place them in a colander and rinse them well under cold water, removing any pumpkin pulp.

(Hint: during other times of the year, shop for pie pumpkins in the produce section. They’re smaller than Halloween carving pumpkins, but still produce loads of seeds!).

Preheat oven to 350 degrees.

Dry the pumpkin seeds by simply spreading them out on a large kitchen towel and placing another towel on top of them. Pat and dry as well as possible (they don’t have to be perfectly dry– I promise). I like to use tea towel because for some reason, the lighter cotton fabric helps absorb the moisture better.

Transfer the seeds to a bowl and lightly drizzle olive oil over them and stir until they’re all coated.

Add seasonings according to each recipe, and place them in the oven for 8-10 minutes (times may vary depending on your oven). Take them out, and turn them over and spread them around well and then put them back in for another 8-10 minutes.

When you take them out, they should be crisp and just slightly browned. If you like them a little more browned and crisp, put them under the broiler for an extra 1-2 minutes.

Keep in mind when they first come out, they’ll be super hot, so even though you’ll want to pop them straight into your mouth, wait a few minutes to avoid getting burned!
